Line a baking sheet with parchment paper or a silicone mat. If you’re using food coloring or flavoring, have them ready.
Combine the sugar, corn syrup, water, and salt in a large, heavy-bottomed pot. Then, stir the mixture over medium heat until the sugar dissolves completely.
Once the sugar is dissolved, stop stirring and let the mixture come to a boil. Then, attach a candy thermometer to the pot and let the mixture reach 320°F (160°C).
Remove it from the heat after the mixture reaches the right temperature. Then, quickly add a few drops of food coloring and flavoring extract, if needed. Then, stir to combine.
Dip the whisk or forks into the syrup and hold them above the prepared baking sheet. Now, flick the syrup back and forth quickly to create thin strands of sugar. Continue until you have a pile of fluffy cotton candy.
Note: Be careful as the sugar syrup is extremely hot.
Once the cotton candy has cooled slightly, gather it into a bundle and shape it as desired. Serve immediately or store in an airtight container to prevent it from hardening.

Making candy with a machine is the simplest process. Here’s a step-by-step guide:
Place the cotton candy machine on a stable, flat surface and make sure every part is clean and dry. Plug in the machine and turn it on to preheat (Most machines need to warm up for about 5 minutes).
If needed, mix a few drops of food coloring and flavoring extract with the granulated sugar (It is optional but adds visual appeal and flavor variety).
Note: Measure the sugar according to your machine’s instructions, typically around 1-2 tablespoons per serving.
Turn off the machine after it’s preheated. Then, carefully pour the measured sugar into the center of the spinning head of the cotton candy machine. then, turn the machine back on.
Hold a cotton candy cone or stick vertically and position it just above the spinning head. As the sugar melts and spins into thin strands, use a gentle, swirling motion to collect the strands on the cone or stick.
Gradually move the cone in a circular motion, twirling it to gather the cotton candy evenly.
Once you have collected enough cotton candy, shape it as desired by gently pressing and fluffing it with your hands. Serve immediately for the best texture and flavor.
